Produced according to the strict rules of the Production Regulations, Traditional Balsamic Vinegar of Modena is a unique and inimitable food excellence obtained from a single ingredient: cooked must and a very long ageing period
Production Regulations: established in the year 2000
Origin and production: the entire production chain must be carried out in the province of Modena with cooked grape must from the 7 vines of the Modena area.
Ageing: Minimum 12 years by law.
The wording “Extra Vecchio” is allowed on the label when the product has aged for over 25 years.
Refinement and Ageing: it is carried out in barrels of different sizes and different woods.
The use of any additive is prohibited
Container and bottling: bottled directly and exclusively by the Protection Consortium in the exclusive and identifying bottle designed by Giugiaro of 100 ml.
Storage and expiry: the deadline is 10 years by law, although it is a characteristic of balsamic vinegar to improve its quality over time.
Once opened, the balsamic vinegar should be kept at room temperature.
